Ingredients

  • 2 cups flour
  • 1 tsp sea salt
  • 1 tsp baking powder
  • 2/3 cup Salty Olive Blood Orange EVOO
  • 1 cup sugar
  • 2 eggs
  • 1 cup chopped pecans
  • 1/3 cup semi-sweet chocolate chips

Instructions

  • 1. Whisk flour salt and baking powder in a medium bowl.
  • 2. In a large bowl whisk olive oil and sugar until combined.  Whisk in egg.
  • 3. Add the dry ingredients and stir until it comes together.
  • 4. Divide dough in two and wrap each half in plastic wrap and chill for at least 2 hours.
  • 5. Heat oven to 350° Line baking sheet with parchment.
  • 6. Form a log from each half – about 3.5 x 8.  Bake about 35-45 minutes and golden
  • 7. Take out logs and lower temp to 300.  When cool enough to handle cut on the bias into 1 in wide slices.
  • 8. Place slices cut side down on baking sheet and bake until dry and toasted about 10-15 minutes.
  • 9. Melt chocolate in microwave and drizzle over cooled cookies.
