Tuscan White Bean Dip

Ingredients

  • 1 can Cannellini beans drained and rinsed
  • 2 Tbsp Salty Olive EVOO (We like Fior Fiore)
  • 2 Tbsp Lemon Juice
  • 1/2 teaspoon Lemon zest
  • 2 cloves Garlic
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 2 Tbsp fresh rosemary minced
  • 1 pinch red pepper flakes

Instructions

  • Place all ingredients in a food processor.
  • Pulse until combined and the beans are pureed.
  • If the dip is too thick, add a bit more lemon juice while the processor is running.
  • Serve with warm crusty bread, or veggies.  Use as a spread on a sandwich or as a topping for a grain bowl.  The possibilities are endless!  ENJOY!
