
Skilet Shrimp Orzo
Suck weeknight meal featuring Shrimp – so easy, so flavorful, done in 30 minutes or less!

Ingredients
- 1 1/4 lb raw shrimp large, peeled and deveined 16-20 count
- 1 tsp smoked paprika
- 1/2 tsp thyme
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp rosemary
- 1/4 tsp salt
- 1/4 tsp black pepper
- 5 cloves garlic, minced
- 2 tbsp Salty Olive EVOO – we like Fior Fiore
- 8 oz Sun dried tomatoes, dry not in oil, julienned or chopped
- 1 cup orzo uncooked
- 2 cups chicken stock
- 1/4 tsp salt
- 14 oz artichoke hearts, drained and roughly chopped
- 8 oz fresh spinach
- 1 cup heavy cream
Instructions
- Season shrimp with garlic, paprika, and herbs, salt & pepper.
- Heat EVOO in a skillet over medium-high heat. Add Shrimp and cook 2 minutes per side. Move shrimp to a bowl.
- n skillet add chopped sun dried tomatoes, 1 cup uncooked orzo, 1 T of EVOO. Cook until the orzo is lightly browned.Add 2 cups chicken stock. Bring to a boil and simmer at med-low about 7 minutes until orzo is cooked.
- Add spinach, artichokes, and cream. Simmer 2 minutes. Stir in shrimp. When warm, test seasonings and adjust salt and pepper or smoked paprika.
- Serve with crusty bread and ENJOY!
