Shrimp Orzo

Skilet Shrimp Orzo

Ingredients

  • 1 1/4 lb raw shrimp large, peeled and deveined 16-20 count
  • 1 tsp smoked paprika
  • 1/2 tsp thyme
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp rosemary
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 5 cloves garlic, minced
  • 2 tbsp Salty Olive EVOO – we like Fior Fiore
  • 8 oz Sun dried tomatoes, dry not in oil, julienned or chopped
  • 1 cup orzo uncooked
  • 2 cups chicken stock
  • 1/4 tsp salt
  • 14 oz artichoke hearts, drained and roughly chopped
  • 8 oz fresh spinach
  • 1 cup heavy cream

Instructions

  • Season shrimp with garlic, paprika, and herbs, salt & pepper.
  • Heat EVOO in a skillet over medium-high heat. Add Shrimp and cook 2 minutes per side. Move shrimp to a bowl.
  • n skillet add chopped sun dried tomatoes, 1 cup uncooked orzo, 1 T of EVOO.  Cook until the orzo is lightly browned.Add 2 cups chicken stock.  Bring to a boil and simmer at med-low about 7 minutes until orzo is cooked.
  • Add spinach, artichokes, and cream.  Simmer 2 minutes.  Stir in  shrimp. When warm,  test seasonings and adjust salt and pepper or smoked paprika.
  • Serve with crusty bread and ENJOY!
